Jalapeno Cheddar Stuffed Chicken

What you need:

-Chicken breast (mine was from a frozen bag)

-Block of cheddar cheese

-Jalapenos (I just used the jar we had from Food Lion, not fresh ones, but I bet that’s even better!)

-(Optional) bread crumbs and milk

Preparation:

1. Thaw the chicken. I defrosted mine in the microwave because this was a last minute meal. I’m sure either works well.

2. Slice the chicken horizontally but do not cut it all the way through from the front to the back. Leave enough to allow it to fold rather than be a sandwich.

3. Slice pieces of cheddar cheese and place them on the chicken. (On one side so you can fold the other side over it).

4. Put the jalapenos on top of the cheese.

5. Fold the top flap of the chicken over on top of the jalapenos and cheese. You may need a toothpick to hold it together.

6. (Optional) Dip the chicken in milk and then in bread crumbs.

7. Place the chicken in a greased baking pan and put it in the oven for 30-40 minutes. I do not remember exactly how long I left mine in the oven. I wanted to make sure it was cooked all the way.

8. Pull out of the oven and allow to cool. Enjoy!
